Food is a funny thing

Was watching a show where the host is getting feed at a local fancy sit down dinner. (local as in a local one to where ever they was filming) First course consisted of a baby carrot with a small teaspoon of sauce on a large plate. With a few strands of what looked to be lemon grass over the top of it. Next course was 3 small "chunks" of fish, with a radish slice on each one. The pieces took and fit on to a fork all at once. Next was a piece of beef, basically a cube of beef, medium rare. Nothing else on the plate as they said it was kobe beef. A simple salad with a single lettuce leaf and a few other assorted plant type things on top. This was the meal. And i wondered WTF. Oh but it was created by a famous chef, or its a four star resturant i hear some people say. Not good enough for me. I have been reading a mans cookbook that went to some of the finest restaurants in the world during the 60s and got the recipes for the best food. It is stuff that you would find in 5 star restaurants. They did not try to pass off a small portion of food as some thing fancy.

I guess its all in the presentation or the wording. I can place 3 asparagus stalks on a plate with a scallop and a baby shrimp, this would not do for a fancy meal. But take 3 asparagus stalks and do a quick blanch in lemon water, tie them off with a blade of green onion also blanched in the lemon water. Pan fry the scallop with a garlic butter and place it on the plate next to the asparagus. delicatly place the small baby shrimp on top and serve. one would sell for $5 the other $20. And why? thats what i don't get.

Don't get me wrong, i have ate at a fancy resturant before. (when they don't have prices o the menu its a little scary) But i was still hungry after and the food was not as exciting as it should for the meals price. May be i am a simple man. May be i just don't need the fancy wording to really enjoy good food. Yes i can be happy to eat at Red Lobster and call it fine dinning. i will be happy. you can keep the high end pretentious food/resturants if thats what makes you happy. to me they are a waist of my time....

My ex used to take me to expensive restaurants... basic rule of thumb: the more expensive the restaurant, the less food they actually serve you. The same rule applies to hotels: the more expensive the hotel, the less "free" things they give you (wifi, coffee, etc.)

Yeap this is where the small portions come from - if you are doing a 9 or 12 course tasting menu then each portion should be small, but if you are someplace where you order an entree then it should be meal sized.
